Doin' Some Cookin'... 5-Minute Garden Fresh Salsa

(The lighting in here does not do this justice but it tastes so good!)

Perfect way to use up all of those tomatoes you have from your garden. You can adjust this recipe to your own heat liking by keeping the seeds and ribs for a spicier salsa. Learn from my mistake and squeeze the juice out of the Roma tomatoes to keep from getting a soupy consistency... oh well... it is still delicious.

Since I took on a healthy living challenge for the month of August I was extremely proud of myself for not eating an entire bag of chips and eating all of this salsa in one sitting like I've been known to do in the past. Instead I sampled the salsa with two chips. Two chips! That was extreme willpower.

With football season around the corner this will be the perfect Game Day snack to put together before kick off.

5-Minute Garden Salsa

Makes 10 1/4 cup Servings


Stars of the Show:
  • 2 garlic cloves, minced
  • 1/2 onion, diced
  • 1/2 jalapeno pepper, seeded (if you want it mild)
  • 4 Roma tomatoes, quartered
  • 2 tbsp cilantro
  • 1 tsp salt
  • 1 lime, juiced
And Action:

Combine onions, garlic, and jalapeno in a food processor and pulse until very small dice.

Add tomatoes, cilantro, salt, and lime juice and pulse until smooth or desired consistency. Enjoy!
