Doin' Some Cookin'... Black Bean and Chicken Tostada

Proud mama brag moment...

Little Man swam with his head under the water tonight at swim class and did a back float on his own!!! This is a huge accomplishment for him because he could not stand to get underwater or get water in his eyes. That only pertained to the pool because he loves showers and bubble baths. 

Because it was a swim class night we need an easy recipe to throw together since that means we still have homework, shower, and dinner when we get home. I refuse to pull into a drive-thru because I want to fuel his little body with the good stuff. 

This recipe couldn't be any easier and is easily adaptable for what you have on hand or to suit your tastes. Little Man ate two with mashed avocado, corn kernels, and chicken. Mine of course was loaded with everything.  


Black Bean and Chicken Tostada

Makes 1 Serving

Stars of the Show:
  • 1 tostada shell
  • 1 tbsp black bean and corn salsa
  • 3 oz grilled chicken breast
  • 1/2 avocado, mashed
  • 1 tsp nonfat Greek yogurt
And Action:

Layer ingredients on top of the tostada shell. Enjoy!
